I cooked again....

Twice in three days! Kevin must be wondering where his wife went!
Actually, he is golfing right now and I had to figure something out for dinner. I had no desire to go back out and I was being cheap anyway. I was determined to make something easy with whatever I had in the house. Well, I got plenty of vegetables, that's for sure!
I had a monster zucchini. I had a banana pepper. I had some corn on the cob that I got at the farmstand down the road. I also had cilantro, limes, and black beans.
I love the burrito bowls from Chipotle, but like I said, I wasn't going out. I decided I could concoct my own version! And it would be healthier since I made it myself!

What you see above is the veggies I used plus garlic powder and cumin I used to season everything (and salt and pepper, of course).

I stripped the corn off the cobs and sliced and gutted the monster zucchini.

I chopped up the zucchini and the banana pepper. While I was doing this I had a little bit of olive oil heating in a skillet. And I had rice boiling. I used basmati rice because, well, I just like it better. I have no problem mixing my food ethnicities.  I say, we can all just get along, right?! :-)

I chopped up cilantro to have it ready for the rice. When the oil was heated I tossed in the zucchini and let it cook a bit. Then I tossed in the pepper and let that cook with the zucchini. The I added in the corn and I decided it all looked a little bland so I grabbed a handful of cherry tomatoes from the fridge (because we a gazillion of them) and tossed those in, too.
I let this mixture cook together till the tomatoes burst open. Oh! After adding each ingredient I seasoned everything, too. When the rice was cooked I mixed in the cilantro and squeezed in the lime. I topped it with the veggies and topped that with a little bit of shredded Mexican cheese. It smelled really good!

I scooped a bit in to a bowl, topped it with a little bit of my salsa, and.....
IT WAS DELISH!!!!!!!!!!!
No need to go to Chipotle anymore!

This looks phenomenal! Don't you love garden dinners? I'm a huge fan of the burrito bowl, so this is right up my alley.

By the way, I have scads of banana peppers and no clue what to do with them. I love them on subs and pizza, etc... but how does one get them from the raw state to "that" state? Any thoughts?

That looks good but I need my burrito bowls from Chipotle. I just do. Once per week. Or else I go crazy.
