A yummy to share...

My sweet blog friend and fellow New England fall addict, Alicia, asked me to check out a recipe she heard about that is in Gooseberry Patch's newest autumn-themed cookbook Autumn With Family & Friends. She knew I had recently purchased the book and I was more than happy to check it out! And being the generous soul that she is, she asked that I share it with all of you, too! I have not made this (yet!) but it sounds so good! And, Alicia, guess what?! It was submitted to GBP by a fellow MA girl! ~* Boiled Cider Spice Cake *~

1 cup raisins ~ 2 cups all-purpose flour, divided ~ 1 cup apple cider ~ 
1 cup brown sugar, packed ~ 1/2 cup butter ~ 1/2 tsp. salt ~ 
2 tsp. baking powder ~ 1 tsp. baking soda ~ 1 tsp. cinnamon
1/2 tsp. ground ginger ~ 1/2 tsp. nutmeg

Preheat oven to 350*. Toss raisins in one tbsp flour to coat. In a large pot, combine cider, brown sugar, butter, and raisins. Bring to a boil over medium heat; remove from heat. Add flour mixture all at once to hot mixture; stir rapidly. Pour batter in to a greased Bundt pan. Bake for about 30 minutes, or until firm and a toothpick inserted in center comes out clean. Cool cake in pan on a wire rack for 10 minutes. Turn cake out of pan and cool completely on rack. Once cool, place on cake plate and dust with powdered sugar. Makes 8 - 10 servings.

Oh, how I adore you!!! :) If we ever get the chance together, you know we must have pumpkin spice lattes AND this spice cake. It would just be the most brilliant way to cap off a day of girlie talk and fun autumn events! Thank you SO much. :) I can't wait to try this out. And how wonderful it was submitted by a fellow MA resident. :)
